Cole slaw with apples and blueberries
Preparation: 15 minutes
1 red cabbage, sliced in quarters
1 red apple, washed anddiced
250 ml (1 cup) frozen blueberries
45 ml (3 tbsp.) olive oil, extra-virgin
60 ml (1/4 cup) apple cider vinegar
30 ml (2 tbsp.) maple syrup
1 clove of garlic, minced
Black pepper, to taste
Salt, to taste
2. Add the diced apple and the frozen blueberries. Mix and put aside.
3. In a small bowl, whisk oil, vinegar, syrup and garlic. Add salt and pepper to the vinaigrette, to taste.
4. Pour on the cabbage and the fruits. Mix well. Season with vinegar, salt and pepper, if needed.
