Fruity pearls mix

250 ml (1 cup) yellow broken peas, uncooked


1 diced peach

125 ml (1/2 cup) raspberries, fresh or frozen (thawed)

1 sliced zucchini

60 ml (1/4 cup) raw pumpkin seeds

1 shallot, finely chopped

30 ml (2 tbsp.) Extra Virgin olive oil

30 ml (2 tbsp.) raspberry vinegar

45 ml (3 tbsp.) orange or orange-mango juice

Salt and pepper, to taste


1. Cook the yellow broken peas. Place them in a saucepan and add water up to about twice as much as the peas. Boil and then reduce the heat to let simmer for about 15 minutes or until the peas are tender, yet firm.

2. Once the peas are cooked, rinse them with cold tap water and drain.

3. Put the peas in a mixing bowl, add the rest of the ingredients and stir well.

4. Serve as the main dish with whole grain crackers or as a side dish with chicken breasts or pork loin.
