Oatmeal pancakes and chilled mango

Makes 6 pancakes

Preparation time: 15 minutes

Cooking time: 15 minutes



375 ml (1 1/2 cup) of quick cooking oat flakes

500 ml (2 cups) of milk or fortified soy beverage

3 eggs

60 ml (1/4 cup) of canola oil

2 ml (1/2 tsp.) of vanilla extract

375 ml (1 1/2 cups) of all-purpose flour

10 ml (2 tsp.) of baking powder

1 pinch of salt

500 ml (2 cups) of Mother Hen organic mango sorbet

125 ml (1/2 cup) slivered almonds

60 ml (1/4 cup) of thawed Mother hen organic frozen raspberries



Combine oat flakes, milk, eggs, oil and vanilla extract in a bowl. Let stand for about 2 minutes.

Add flour, baking powder and salt. Mix well.

In a non-stick skillet lightly heated, place about 125 ml or ½ cup of pancake mix with a spoon.

Cook the pancake for about 3-4 minutes on each side.

Repeat the last step for the rest of the mixture.

Top each pancake with a scoop of mango sorbet and sprinkle with almonds and raspberries.
