Spinach Salad with Clementines and strawberry vinaigrette

Ingredients

175 ml (3/4 cup) of Mother Hen organic frozen strawberries

5 fresh basil leaves

A pinch of salt

Ground black pepper, to taste

20 ml (1 tbsp. + 1 tsp) of olive oil

10 ml (2 tsp) of balsamic vinegar

1.0 L (4 cups) of washed baby spinach

¼ of a red onion, thinly sliced

6 clementines peeled and quartered

 

Preparation

In a blender, combine strawberries, basil, salt, pepper, olive oil and vinegar. Set aside.

In a bowl, combine spinach, red onion and clementines.

Pour the dressing over the spinach salad and mix.

Serve a fish fillet or grilled chicken.
