Sweet and Sour Quinoa

Sweet and Sour Quinoa

Yield: 4 to 6servings

250 ml (1 cup) uncooked quinoa, rinsed with water

375 ml (1 ½ cup) sodium-reduced chicken broth

1 can (540 ml) chickpeas, rinsed and drained

2 finely chopped green onions

125 ml (1/2 cup) mix of nuts and dries fruits (almonds, cranberries, pistachios, etc.)*

125 ml (1/2 cup) finely chopped cauliflower

10 cherry tomatoes cut in half

30ml (2 tbsp.) extra virgin olive oil

Salt and pepper, to taste

Chopped fresh chopped, to taste

Chopped fresh parsley, to taste

*Attention! Nuts and peanuts are forbidden in elementary school. If necessary, replace the nuts by soybeans.


1. Cook the quinoa. Once rinsed, put it in a pan. Heat over medium heat until the quinoa sizzles. Add chicken broth and bring to boil. Reduce heat to low and cook covered about 15 minutes.

2. Meanwhile, combine the chickpeas, onions, nuts and dry fruits, cauliflower and cherry tomatoes in a bow. Set aside.

3. When the quinoa is cooked, add it to the mix of vegetables and chickpeas. Add the oil, salt, pepper and herbs.
