Ultimate Raspberry Delight Muffins

Makes 12 muffins

Cooking time: 30 minutes



250 ml (1 cup) of Mother Hen organic raspberry sorbet at room temperature

1 egg

250 ml (1 cup) of milk or fortified soy beverage

60 ml (1/4 cup) of canola oil

500 ml (2 cups) of all-purpose flour

60 ml (1/4 cup) of chia seeds

30 ml (2c. tbsp) of grated cocoa

15ml (1 tbsp) of baking powder

5 ml (1 tsp) of baking soda

250 ml (1 cup) of Mother Hen organic frozen raspberries

80 ml (1/3 cup) of dark chocolate chips



Preheat oven to 375 ˚ F (190 ˚ C). Line 12 muffin cups. Set aside.

In a large bowl, mix the sorbet, egg, milk and oil with a whisk. Set aside.

In a second bowl, combine flour, chia seeds, cocoa, baking powder and baking soda.

Pour the flour mixture into the bowl containing the sorbet mixture. Mix gently and add the raspberries and chocolate chips. Mix again, just enough to moisten all ingredients. Do not over mix.

Bake in the oven for about 30 minutes or until a toothpick inserted in the center of the muffins comes out clean.
